Ingredients

  • 2 cups cooked white rice

  • 1 cup grated mozzarella cheese

  • 1 cup chopped ham

  • 1/2 cup peas

  • 1/2 cup green corn

  • 1/2 cup of tomato sauce

  • 1/2 cup grated carrot

  • 1/2 cup chopped red bell pepper

  • 1/2 cup mayonnaise

  • 1/2 cup of milk

  • salt to taste

  • pepper to taste

  • Chopped parsley to taste

Directions

  • Preheat the oven to 180°C.
  • In a large bowl, mix the cooked rice, ham, mozzarella cheese, green corn, peas, grated carrots and chopped red pepper.
  • In a separate bowl, mix tomato sauce, mayonnaise, milk, salt, pepper and chopped parsley. 
    Pour this mixture over the ingredients in the large bowl and stir well to incorporate all the flavors.
  • Transfer the mixture to a baking dish or refractory greased with a little butter or olive oil.
  • Cover the baking sheet with aluminum foil and place in the preheated oven for about 20 minutes.
  • Remove the foil and bake for another 10 to 15 minutes, or until the top is golden brown and bubbly.
  • Remove from oven and let rest for a few minutes before serving.
  • Serve the hot oven rice and enjoy!
