Ingredients

  • 2 cups cooked and drained pinto beans

  • 200g diced bacon

  • 1 smoked calabrese sausage, cut into cubes

  • 1 large onion, chopped

  • 4 garlic cloves, minced

  • 2 cups of cassava flour

  • 3 boiled and chopped eggs

  • Cheiro-verde (parsley and chives), chopped to taste

  • salt to taste

Directions

  • In a large pan, fry the bacon until golden and crispy. 
    Remove the bacon from the pan, leaving the fat in the pan.
  • In the same pan, add the pepperoni sausage and fry until golden.
  • Add the chopped onion and garlic to the pan and sauté until soft and lightly browned.
  • Add the cooked pinto beans to the pan and mix well with the other ingredients.
  • Gradually add the cassava flour to the mixture in the pan, stirring constantly to incorporate well.
  • Keep stirring until the cassava flour is lightly golden and well mixed with the other ingredients.
  • Remove the pan from the heat and add the chopped boiled eggs, the parsley and the reserved fried bacon. 
    Mix it up.
  • Taste and adjust salt if necessary.
  • Transfer the tropeiro beans to a platter or serving plate.
  • Serve the tropeiro beans hot, accompanied by white rice and other side dishes of your choice, such as braised kale and pork rinds.
