Ingredients
2 cups cooked and drained pinto beans
200g diced bacon
1 smoked calabrese sausage, cut into cubes
1 large onion, chopped
4 garlic cloves, minced
2 cups of cassava flour
3 boiled and chopped eggs
Cheiro-verde (parsley and chives), chopped to taste
salt to taste
Directions
- In a large pan, fry the bacon until golden and crispy.Â
Remove the bacon from the pan, leaving the fat in the pan. - In the same pan, add the pepperoni sausage and fry until golden.
- Add the chopped onion and garlic to the pan and sauté until soft and lightly browned.
- Add the cooked pinto beans to the pan and mix well with the other ingredients.
- Gradually add the cassava flour to the mixture in the pan, stirring constantly to incorporate well.
- Keep stirring until the cassava flour is lightly golden and well mixed with the other ingredients.
- Remove the pan from the heat and add the chopped boiled eggs, the parsley and the reserved fried bacon.Â
Mix it up. - Taste and adjust salt if necessary.
- Transfer the tropeiro beans to a platter or serving plate.
- Serve the tropeiro beans hot, accompanied by white rice and other side dishes of your choice, such as braised kale and pork rinds.
