To make your Couscuz Paulista, use the ingredients below and make according to the instructions.

Ingredients

  • 2 cups corn flakes

  • 1 cup of water

  • 1 tablespoon olive oil

  • 1 chopped onion

  • 2 minced garlic cloves

  • 1 chopped green pepper

  • 1 chopped tomato

  • 1 can of canned sardines or tuna (optional)

  • 1 cup fresh or frozen peas

  • 1 cup green corn

  • 1/2 cup chopped green olives

  • Salt to taste

  • Black pepper to taste

  • Chilled greens to taste

Directions

  • In a bowl, place the corn flour and add the water. 
    Mix well until the flour is moist and hydrated. 
    Reserve.
  • In a large pan, heat the oil and sauté the onion, garlic and bell pepper until soft.
  • Add the diced tomato and sauté for a few more minutes, until it starts to break down.
  • If using canned sardines or tuna, shred it and add it to the pan. 
    Otherwise, skip this step.
  • Add the pea, green corn and olives. 
    Season with salt and pepper to taste. 
    Mix well.
  • Add the hydrated cornflour mixture to the pan, little by little, stirring constantly so that it is well incorporated and free of lumps.
  • Cook over low heat for about 5 to 10 minutes, stirring constantly, until the couscous mass is cooked through and firm.
  • Remove the pan from the heat and let it rest for a few minutes.
  • Unmold the couscous into a large plate or mold, pressing lightly so that it becomes compact.
  • Decorate the couscous with chopped parsley on top and serve hot.
