Ingredients

  • 1 cup of wheat for kibbeh

  • 2 cups of boiling water

  • 2 medium tomatoes, seeded and diced

  • 1 medium cucumber, seeded, diced

  • 1 medium onion, chopped into cubes

  • 1/2 cup chopped parsley

  • 1/4 cup chopped mint

  • Juice of 2 lemons

  • 3 tablespoons extra virgin olive oil

  • Salt and pepper to taste

Directions

  • In a large bowl, place the wheat for kibbeh and add the boiling water. 
    Cover and let sit for about 30 minutes, or until wheat is tender and has absorbed all of the water. 
    If necessary, drain excess water using a sieve.
  • After the hydrated wheat is ready, add the chopped tomatoes, cucumber, onion, parsley and mint. 
    Mix well.
  • In another small bowl, prepare the sauce by mixing the lemon juice, olive oil, salt and pepper. 
    Pour the sauce over the tabbouleh and mix again, making sure all the ingredients are well incorporated.
  • Taste and adjust seasoning if necessary.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving, so the flavors blend and the salad is chilled.
  • Serve the tabbouleh with pita bread or toast, as a starter or accompaniment to main courses.
