Ingredients
2 cups sweet corn (can be fresh or canned)
3 eggs
1 cup of sugar
1/2 cup oil
1 cup wheat flour
1/2 cup of cornmeal
1 tablespoon powdered yeast
1 pinch of salt
Directions
- Preheat the oven to 180°C and grease a cake tin with butter or oil.
- In the blender, add the green corn, eggs, sugar and oil.
Beat well until you get a homogeneous mixture. - In a bowl, mix the wheat flour, cornmeal and salt.
- Pour the liquid mixture from the blender into the bowl with the dry ingredients.
Stir well until you get a uniform mass. - Lastly, add the baking powder and mix gently.
- Pour the dough into the greased form and place in the preheated oven.
- Bake for about 40-45 minutes, or until the cake is golden brown and firm.
To check if it’s ready, insert a toothpick into the center of the cake – if it comes out clean, it’s ready. - Remove the cake from the oven and let it cool before unmolding.
- Serve the green corn cake in slices and enjoy!
