Ingredients
2 cups of cooked beans (can be black beans, carioca beans, mulatinho beans, etc.)
1 medium onion, chopped
2 garlic cloves, chopped
2 carrots, peeled and cut into slices
2 potatoes, peeled and cut into cubes
2 tomatoes, chopped
4 cups vegetable broth (can be made with water and vegetable broth cubes)
1 bay leaf
1 teaspoon cumin powder
1 teaspoon paprika (sweet or spicy, whichever you prefer)
Salt and pepper to taste
Olive oil
Chopped fresh parsley for garnish (optional)
Directions
- In a large pan, heat some olive oil over medium heat.
Add the chopped onion and garlic and sauté until golden. - Add the carrots, potatoes and tomatoes to the pan.
Saute for a few more minutes, stirring occasionally. - Add the cooked beans to the pan and stir well.
- Pour the vegetable broth into the pan and add the bay leaf, ground cumin and paprika.
Season with salt and pepper to taste. - Bring the soup to a boil, then reduce the heat to medium-low.
Cook for about 20-25 minutes, or until the vegetables are tender. - Remove bay leaf and adjust seasoning if necessary.
- If you prefer a creamier soup, you can use a hand blender or blender to puree the soup until you reach the desired consistency.
- Serve the soup hot, garnished with chopped parsley, if desired.
