Ingredients
300g desalted and shredded cod
2 medium potatoes, boiled and cut into cubes
1 red onion, cut into thin slices
1 red pepper, cut into thin strips
1 yellow pepper, cut into thin strips
1 cup black olives, pitted, cut in half
3 boiled eggs, cut into slices
2 ripe tomatoes, cut into cubes
Fresh parsley and coriander to taste, chopped
Extra virgin olive oil
1 lemon juice
Salt and pepper to taste
Directions
- Leave the cod to soak in water in the refrigerator for about 24 hours, changing the water at least 3 times.
- Once desalted, shred the cod.
- Cook the potatoes in salted water until they are soft but firm.
After cooking, cut into cubes. - Cut the onion, peppers, olives, eggs and tomatoes according to the instructions in the ingredient list.
- In a large bowl, mix the shredded cod, potatoes, onion, peppers, olives, eggs and tomatoes.
- Drizzle the salad with extra virgin olive oil and lemon juice.
- Add salt and pepper to taste.
Remember that cod is already salty, so don’t overdo it with salt. - Sprinkle chopped parsley and coriander over the salad for a fresh touch.
- Gently mix all the ingredients so that the flavors combine.
- Leave the salad in the refrigerator for at least 30 minutes before serving so that it is well chilled.
