Ingredients

  • 300g desalted and shredded cod

  • 2 medium potatoes, boiled and cut into cubes

  • 1 red onion, cut into thin slices

  • 1 red pepper, cut into thin strips

  • 1 yellow pepper, cut into thin strips

  • 1 cup black olives, pitted, cut in half

  • 3 boiled eggs, cut into slices

  • 2 ripe tomatoes, cut into cubes

  • Fresh parsley and coriander to taste, chopped

  • Extra virgin olive oil

  • 1 lemon juice

  • Salt and pepper to taste

Directions

  • Leave the cod to soak in water in the refrigerator for about 24 hours, changing the water at least 3 times.
  • Once desalted, shred the cod.
  • Cook the potatoes in salted water until they are soft but firm. 
    After cooking, cut into cubes.
  • Cut the onion, peppers, olives, eggs and tomatoes according to the instructions in the ingredient list.
  • In a large bowl, mix the shredded cod, potatoes, onion, peppers, olives, eggs and tomatoes.
  • Drizzle the salad with extra virgin olive oil and lemon juice.
  • Add salt and pepper to taste. 
    Remember that cod is already salty, so don’t overdo it with salt.
  • Sprinkle chopped parsley and coriander over the salad for a fresh touch.
  • Gently mix all the ingredients so that the flavors combine.
  • Leave the salad in the refrigerator for at least 30 minutes before serving so that it is well chilled.
