Ingredients
3 cups of wheat flour
2 cups of sugar
1 cup of milk
1 cup butter (at room temperature)
4 eggs
2 teaspoons of baking powder
1 teaspoon vanilla extract
2 cups fresh strawberries, washed and chopped
1/2 cup sugar
2 tablespoons cornstarch
Juice of half a lemon
1 cup of whipped cream
Fresh strawberries to decorate
Directions
- In a pan, mix the chopped strawberries, sugar, cornstarch and lemon juice.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- Set aside to cool.
- Preheat the oven to 180°C and grease a cake tin.
- In a large bowl, beat the butter and sugar until light and creamy.
- Add the eggs, one at a time, beating well after each addition.
- Add the sifted wheat flour, alternating with the milk, starting and ending with the flour.
- Add the baking powder and vanilla extract, mixing well.
- Pour half of the batter into the prepared pan.
- Spread the strawberry filling evenly over the dough in the pan.
- Cover with the remaining dough.
- Bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely before removing from the pan.
- When the cake is completely cool, cover with whipped cream and decorate with fresh strawberries.
