Ingredients

  • 3 ripe bananas

  • 2 cups of wheat flour

  • 1 cup of sugar

  • 1/2 cup vegetable oil

  • 3 eggs

  • 1 teaspoon of vanilla essence

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon of cinnamon powder (optional)

  • 1/2 cup natural yogurt

Directions

  • Preheat the oven to 180°C. 
    Grease a cake pan with margarine and sprinkle with flour.
  • In a bowl, mash the bananas with a fork until puree.
  • In another large bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using).
  • In a third bowl, beat the eggs with the sugar until you obtain a creamy mixture. 
    Add the oil, vanilla essence and banana puree, mixing well.
  • Gradually add the dry ingredients to the banana mixture, stirring gently to combine.
  • Add the yogurt to the dough and stir until you obtain a homogeneous dough.
  • Lastly, add the baking powder to the dough and mix gently.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  • Serve the fluffy banana cake cut into slices and enjoy!
