Ingredients
2 ripe bananas
2 eggs
1/2 cup vegetable oil (can be replaced with coconut or apple oil)
1 cup brown sugar (or other sweetener of your choice)
1 teaspoon of vanilla essence
1 1/2 cup rolled oats
1 cup whole wheat flour
1 teaspoon of baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon of cinnamon powder (optional)
1/2 cup chopped walnuts or chestnuts (optional)
Directions
- Preheat the oven to 180°C.
Grease a cake pan with a little oil or butter and sprinkle with flour. - In a large bowl, mash the ripe bananas with a fork until puree.
- Add eggs, vegetable oil and vanilla essence to the banana puree.
Mix well. - In another bowl, mix the oats, whole wheat flour, baking powder, baking soda, salt and cinnamon (if using).
- Gradually add the dry ingredients to the banana mixture, stirring until everything is well combined.
If desired, add walnuts or chestnuts and mix. - Pour the batter into the prepared pan and smooth the surface.
- Bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
