Make this Sardines in the Pressure Cooker with the ingredients below, following the preparation instructions.

Ingredients

  • 1 kg of clean, scaleless sardines

  • 2 large onions, cut into rings

  • 3 ripe tomatoes, cut into slices

  • 2 peppers (red and green), cut into strips

  • 4 garlic cloves, chopped

  • 1/2 cup olive oil

  • 1/2 cup dry white wine

  • 1 lemon juice

  • Salt and pepper to taste

  • 1 bay leaf

  • Parsley and coriander to taste (optional)

  • Enough water to cover the sardines in the pressure cooker

Directions

  • Season the sardines with salt, pepper and lemon juice. Set aside for a few minutes.
  • In a pressure cooker, add half the oil to the bottom.
  • Make a layer with half the onions, tomatoes, peppers and garlic.
  • Arrange the sardines on this layer.
  • Repeat the process with the remaining onions, tomatoes, peppers and garlic.
  • Drizzle with the remaining olive oil, add the bay leaf, parsley and coriander (if using).
  • Pour the white wine over the ingredients in the pan.
  • Add enough water to cover the sardines.
  • Cover the pressure cooker and place over high heat.
  • Once the pressure starts, reduce the heat to medium and cook for about 15 to 20 minutes.
  • Turn off the heat and wait for the pressure to release completely before opening the pan.
  • Check the seasoning and adjust if necessary.
