Ingredients
3 medium apples, peeled, seeded and diced
2 cups of wheat flour
1 cup of sugar (you can use granulated, demerara or brown sugar)
1/2 cup vegetable oil (such as canola or sunflower oil)
3 eggs
1 teaspoon powdered yeast
1 teaspoon cinnamon powder
1/2 teaspoon of salt
1 teaspoon vanilla extract (optional)
Juice of half a lemon (helps prevent apples from browning)
Icing sugar (optional, for sprinkling)
Directions
- Preheat the oven to 180°C and grease a cake tin (approximately 23 cm in diameter) with oil or butter.
- In a medium bowl, mix the sliced apples with the lemon juice to prevent them from browning.
- In a large bowl, mix the flour, sugar, baking powder, cinnamon powder and salt.
- Add eggs, vegetable oil and vanilla extract to the dry mixture.
Mix until all ingredients are combined, but avoid over-mixing. - Add the sliced apples to the dough and stir gently to distribute them evenly.
- Pour the dough into the prepared mold and level the surface.
- Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes before transferring to a cooling rack.
- Once the cake is completely cooled, you can sprinkle icing sugar on top if desired.
