Ingredients

  • 3 medium apples, peeled, seeded and diced

  • 2 cups of wheat flour

  • 1 cup of sugar (you can use granulated, demerara or brown sugar)

  • 1/2 cup vegetable oil (such as canola or sunflower oil)

  • 3 eggs

  • 1 teaspoon powdered yeast

  • 1 teaspoon cinnamon powder

  • 1/2 teaspoon of salt

  • 1 teaspoon vanilla extract (optional)

  • Juice of half a lemon (helps prevent apples from browning)

  • Icing sugar (optional, for sprinkling)

Directions

  • Preheat the oven to 180°C and grease a cake tin (approximately 23 cm in diameter) with oil or butter.
  • In a medium bowl, mix the sliced ​​apples with the lemon juice to prevent them from browning.
  • In a large bowl, mix the flour, sugar, baking powder, cinnamon powder and salt.
  • Add eggs, vegetable oil and vanilla extract to the dry mixture. 
    Mix until all ingredients are combined, but avoid over-mixing.
  • Add the sliced ​​apples to the dough and stir gently to distribute them evenly.
  • Pour the dough into the prepared mold and level the surface.
  • Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes before transferring to a cooling rack.
  • Once the cake is completely cooled, you can sprinkle icing sugar on top if desired.
