Ingredients

  • 2 cups of cooked beans (can be black beans, carioca beans, mulatinho beans, etc.)

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 2 carrots, peeled and cut into slices

  • 2 potatoes, peeled and cut into cubes

  • 2 tomatoes, chopped

  • 4 cups vegetable broth (can be made with water and vegetable broth cubes)

  • 1 bay leaf

  • 1 teaspoon cumin powder

  • 1 teaspoon paprika (sweet or spicy, whichever you prefer)

  • Salt and pepper to taste

  • Olive oil

  • Chopped fresh parsley for garnish (optional)

Directions

  • In a large pan, heat some olive oil over medium heat. 
    Add the chopped onion and garlic and sauté until golden.
  • Add the carrots, potatoes and tomatoes to the pan. 
    Saute for a few more minutes, stirring occasionally.
  • Add the cooked beans to the pan and stir well.
  • Pour the vegetable broth into the pan and add the bay leaf, ground cumin and paprika. 
    Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to medium-low. 
    Cook for about 20-25 minutes, or until the vegetables are tender.
  • Remove bay leaf and adjust seasoning if necessary.
  • If you prefer a creamier soup, you can use a hand blender or blender to puree the soup until you reach the desired consistency.
  • Serve the soup hot, garnished with chopped parsley, if desired.
