Ingredients
1 cup coconut milk (or other plant-based milk of your choice)
1 cup sugar (you can adjust the amount according to your taste)
1/2 cup cocoa powder
2 tablespoons vegan margarine (or coconut oil)
A bit of salt
Chocolate sprinkles or grated coconut (optional, for topping)
Directions
- In a medium saucepan, combine the coconut milk, sugar, cocoa powder and pinch of salt.
- Place the mixture over medium heat and stir constantly with a wooden spoon or silicone spatula.Â
It is important to stir to prevent the mixture from burning or sticking to the bottom of the pan. - As the mixture heats, add the vegan margarine (or coconut oil) and continue stirring until the margarine is completely melted and all ingredients are well combined.
- Continue cooking the brigadeiro over medium heat, stirring constantly, until the mixture begins to thicken.Â
This can take anywhere from 10 to 15 minutes, depending on your stove and the ingredients used. - The brigadeiro will be ready when you pass the spoon along the bottom of the pan and the mixture takes a while to cover the space again.
- Remove the pan from the heat and let the brigadeiro cool slightly.Â
It will continue to thicken as it cools. - While the brigadeiro is still warm, you can roll small portions with your hands lightly greased with oil, forming balls.Â
If you prefer, you can also serve the brigadeiro as cream in bowls. - If desired, dip the brigadeiro balls in chocolate sprinkles or grated coconut.
- Let the balls cool completely before serving.Â
This will help firm the consistency of the brigadeiro.
