Ingredients

  • For the carrot cake:
  • 3 medium carrots (about 300g), peeled and chopped

  • 3 eggs

  • 1 cup vegetable oil

  • 2 cups of sugar

  • 2 cups of wheat flour

  • 1 tablespoon baking powder

  • A bit of salt

  • For the chocolate topping:
  • 4 tablespoons of chocolate powder

  • 2 tablespoons of butter

  • 2 tablespoons of milk

  • 1 cup of sugar

Directions

  • Preheat the oven to 180°C. 
    Grease and flour a cake pan.
  • In a blender, place the chopped carrots, eggs and oil. 
    Mix until you get a smooth mixture.
  • In a large bowl, mix the sugar, wheat flour, baking powder and a pinch of salt.
  • Pour the blender mixture into the bowl with the dry ingredients. 
    Stir until everything is well incorporated.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • While the cake is baking, prepare the chocolate frosting. 
    In a pan, melt the butter over low heat. 
    Add the chocolate powder, milk and sugar. 
    Cook, stirring constantly, until the mixture begins to thicken. 
    Remove from heat and set aside.
  • Once the cake is ready, remove it from the oven and let it cool for a few minutes in the pan. 
    Then turn it out onto a wire rack to cool completely.
  • When the cake is completely cool, pour the chocolate frosting over it, spreading it evenly.
  • Let the chocolate frosting harden before cutting and serving the cake. 
    You can speed up this process by placing the cake in the refrigerator for a while.
