Ingredients
- For the carrot cake:
3 medium carrots (about 300g), peeled and chopped
3 eggs
1 cup vegetable oil
2 cups of sugar
2 cups of wheat flour
1 tablespoon baking powder
A bit of salt
- For the chocolate topping:
4 tablespoons of chocolate powder
2 tablespoons of butter
2 tablespoons of milk
1 cup of sugar
Directions
- Preheat the oven to 180°C.Â
Grease and flour a cake pan. - In a blender, place the chopped carrots, eggs and oil.Â
Mix until you get a smooth mixture. - In a large bowl, mix the sugar, wheat flour, baking powder and a pinch of salt.
- Pour the blender mixture into the bowl with the dry ingredients.Â
Stir until everything is well incorporated. - Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the chocolate frosting.Â
In a pan, melt the butter over low heat.Â
Add the chocolate powder, milk and sugar.Â
Cook, stirring constantly, until the mixture begins to thicken.Â
Remove from heat and set aside. - Once the cake is ready, remove it from the oven and let it cool for a few minutes in the pan.Â
Then turn it out onto a wire rack to cool completely. - When the cake is completely cool, pour the chocolate frosting over it, spreading it evenly.
- Let the chocolate frosting harden before cutting and serving the cake.Â
You can speed up this process by placing the cake in the refrigerator for a while. - Serve the carrot cake with chocolate frosting and enjoy!
