Ingredients
500g beef jerky (dried meat)
2 cups of rice
1 medium onion, chopped
3 garlic cloves, minced
2 tomatoes, seeded and chopped
1 green pepper, chopped
2 tablespoons of vegetable oil
4 cups of boiling water
Salt to taste
Black pepper to taste
Chopped parsley (optional)
Directions
- In a large bowl, place the beef jerky and cover with cold water.
Soak for approximately 4 hours to desalt.
Change the water a few times during the process to remove excess salt. - After the desalting period, drain the water and cut the jerky meat into small cubes.
- In a large pan, heat the vegetable oil over medium heat.
Add the chopped onion and garlic, and sauté until golden. - Add the beef jerky and fry for a few minutes until golden brown.
- Add chopped tomatoes and green peppers.
Sauté for a few more minutes until the vegetables are soft. - Then add the rice and mix well to mix it with the other ingredients.
- Pour the boiling water into the pan and season with salt and black pepper to taste.
Mix again. - Reduce the heat to medium-low, cover the pan and cook for approximately 20 minutes, or until the rice is cooked through and the water has been absorbed.
- After that time, turn off the heat and let the rice rest for a few minutes before serving.
- If desired, sprinkle chopped parsley over the rice before serving.
