To make this very tasty Carreteiro Rice, use the ingredients below and follow the step-by-step instructions.

Ingredients

  • 500g beef jerky (dried meat)

  • 2 cups of rice

  • 1 medium onion, chopped

  • 3 garlic cloves, minced

  • 2 tomatoes, seeded and chopped

  • 1 green pepper, chopped

  • 2 tablespoons of vegetable oil

  • 4 cups of boiling water

  • Salt to taste

  • Black pepper to taste

  • Chopped parsley (optional)

Directions

  • In a large bowl, place the beef jerky and cover with cold water. 
    Soak for approximately 4 hours to desalt. 
    Change the water a few times during the process to remove excess salt.
  • After the desalting period, drain the water and cut the jerky meat into small cubes.
  • In a large pan, heat the vegetable oil over medium heat. 
    Add the chopped onion and garlic, and sauté until golden.
  • Add the beef jerky and fry for a few minutes until golden brown.
  • Add chopped tomatoes and green peppers. 
    Sauté for a few more minutes until the vegetables are soft.
  • Then add the rice and mix well to mix it with the other ingredients.
  • Pour the boiling water into the pan and season with salt and black pepper to taste. 
    Mix again.
  • Reduce the heat to medium-low, cover the pan and cook for approximately 20 minutes, or until the rice is cooked through and the water has been absorbed.
  • After that time, turn off the heat and let the rice rest for a few minutes before serving.
  • If desired, sprinkle chopped parsley over the rice before serving.
