Ingredients
2 tablespoons of oil or olive oil
1 small onion chopped
3 minced garlic cloves
1 kg of chicken in pieces
1 chopped tomato
1 chopped bell pepper
2 small carrots chopped
3 small potatoes chopped
2 tsp smoked paprika or paprika
1 teaspoon saffron
⅓ teaspoon of black pepper
2 teaspoons of salt
1 chicken broth
Rice (200g)
2 tablespoon of coriander
Directions
- In a pressure cooker over medium heat, add 2 tablespoons of oil or olive oil;
- Add 1 small chopped onion;
- Mix and let it brown;
- Add 3 minced garlic cloves;
- Let it fry;
- Add 1 kg of chicken in pieces;
- Mix;
- Add 1 teaspoon of salt;
- Add 2 tsp of smoked paprika or paprika;
- Add 1 chicken broth;
- Add ⅓ teaspoon of black pepper;
- Mix and let it fry a little;
- Add 1 chopped bell pepper;
- Add 1 chopped tomato;
- Add 1 tablespoon of coriander;
- Add 1 teaspoon of turmeric;
- Mix and sauté for 2 minutes;
- Add 2 small chopped carrots;
- Add 3 small chopped potatoes;
- Add water to cover everything and pass 4 fingers;
- Add 1 teaspoon of salt;
- Mix;
- Cover and cook on medium heat for 10 minutes after getting pressure;
- Let the pressure release and open the pot;
- Add Rice (200g);
- Turn on medium heat;
- Mix;
- Let it cook for 15 minutes;
- Once the rice is cooked, turn off the heat;
- Add the rest of the cilantro;
- Mix;
- Your chicken soup is ready!
