Ingredients
3 whole eggs
2 cups wheat flour (tea)
2 tablespoons butter or margarine
1 and 1/2 cup sugar
1 tablespoon baking powder
1 pack of shredded coconut
1 glass of milk
1/2 cup (tea) cornstarch
1 pinch of salt
Directions
- In a blender add the eggs, milk, butter or margarine, sugar, salt and beat well.Â
Add the wheat flour little by little with the blender on.Â
Add the cornstarch and beat more.Â
Then put the baking soda and beat again to mix in the dough. - Reserve about 2 spoons of grated coconut and add the rest to the dough.Â
Mix with a spoon or whisk (do not use a blender) and pour the mixture into a greased baking dish sprinkled with flour or butter. - In a preheated oven at 180º₢, place the coconut cake to bake for approximately 30 minutes.Â
Carefully remove from the oven, wait to cool and unmold.Â
Sprinkle over the grated coconut that had been reserved and the coconut cake can now be served.
