To make your Cream of Corn, use the ingredients below and follow the step-by-step instructions for preparation.

Ingredients

  • 4 ears of corn (or 2 cans of canned corn)

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 2 tablespoons of butter

  • 2 cups vegetable broth or water

  • 1 cup of milk

  • 1/2 cup sour cream

  • Salt and pepper to taste

  • Chopped parsley for garnish (optional)

Directions

  • If using corn on the cob, remove the kernels from the cob with a knife. 
    If using canned corn, drain and rinse well.
  • In a large pan, melt the butter over medium heat. 
    Add the chopped onion and garlic and sauté until soft and lightly browned.
  • Add the corn kernels to the pan and sauté for a few more minutes, stirring occasionally.
  • Add the vegetable broth or water to the pot and bring to a boil. 
    Reduce heat to medium-low and simmer for about 10 minutes, until corn is tender.
  • Remove the pan from the heat and let the mixture cool slightly. 
    Then, using a blender or food processor, puree the mixture until smooth.
  • Return the creamed corn to the pan over low heat. 
    Add the milk and cream, stirring well to combine.
  • Season with salt and pepper to taste and heat the creamed corn for a few more minutes, stirring occasionally, until hot.
  • Serve the corn cream hot, garnished with chopped parsley if desired.
