Ingredients
4 ears of corn (or 2 cans of canned corn)
1 small onion, chopped
2 garlic cloves, minced
2 tablespoons of butter
2 cups vegetable broth or water
1 cup of milk
1/2 cup sour cream
Salt and pepper to taste
Chopped parsley for garnish (optional)
Directions
- If using corn on the cob, remove the kernels from the cob with a knife.
If using canned corn, drain and rinse well. - In a large pan, melt the butter over medium heat.
Add the chopped onion and garlic and sauté until soft and lightly browned. - Add the corn kernels to the pan and sauté for a few more minutes, stirring occasionally.
- Add the vegetable broth or water to the pot and bring to a boil.
Reduce heat to medium-low and simmer for about 10 minutes, until corn is tender. - Remove the pan from the heat and let the mixture cool slightly.
Then, using a blender or food processor, puree the mixture until smooth. - Return the creamed corn to the pan over low heat.
Add the milk and cream, stirring well to combine. - Season with salt and pepper to taste and heat the creamed corn for a few more minutes, stirring occasionally, until hot.
- Serve the corn cream hot, garnished with chopped parsley if desired.
