Easy and yummy cornmeal cake like this is hard to find!

Ingredients

  • 3 eggs

  • 50 grams of grated coconut

  • 50 grams of grated Parmesan cheese (or other cheese of your choice)

  • 2 cups of corn flour (corn)

  • 1 cup (tea) milk

  • 1 cup (tea) of sugar

  • 1 tablespoon of cake yeast

  • 1/2 cup (tea) of oil

Directions

  • In a blender add eggs, sugar, milk and oil. 
    Cover and beat for 30 seconds and add the cornmeal, grated Parmesan cheese and grated coconut. 
    Beat for another 2 minutes.
  • Add baking powder to the dough and mix with a spoon until homogenized. 
    Transfer the dough to a greased shape with oil and sugar, take it to a preheated oven at 240º₢ and bake for approximately 30 to 40 minutes.
  • After the cake has cooled to room temperature, unmold onto a plate or platter and the cornmeal cake is ready to serve.
