Ingredients
2 cans of drained corn (or 3 cups of fresh corn)
3 eggs
1 cup of cornmeal
1 cup of sugar
1 cup of milk
1/2 cup vegetable oil
1/2 cup wheat flour
1 tablespoon powdered yeast
1 pinch of salt
Directions
- Preheat the oven to 180°C and grease a round mold with butter and cornmeal.
- In the blender, place the drained corn, the eggs, the sugar, the vegetable oil and the milk.Â
Beat well until you get a homogeneous mixture. - In a separate bowl, mix the cornmeal, wheat flour, baking powder and salt.
- Pour the liquid mixture from the blender over the dry ingredients in the bowl.Â
Mix gently until all ingredients are incorporated. - Pour the batter into the prepared tin and bake in the preheated oven for about 40-45 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes.Â
Then transfer it to a cooling rack and let it cool completely. - The creamy corn cake can be served warm or cold.Â
