Below are the ingredients needed to make this Creamy Corn Cake.

Ingredients

  • 2 cans of drained corn (or 3 cups of fresh corn)

  • 3 eggs

  • 1 cup of cornmeal

  • 1 cup of sugar

  • 1 cup of milk

  • 1/2 cup vegetable oil

  • 1/2 cup wheat flour

  • 1 tablespoon powdered yeast

  • 1 pinch of salt

Directions

  • Preheat the oven to 180°C and grease a round mold with butter and cornmeal.
  • In the blender, place the drained corn, the eggs, the sugar, the vegetable oil and the milk. 
    Beat well until you get a homogeneous mixture.
  • In a separate bowl, mix the cornmeal, wheat flour, baking powder and salt.
  • Pour the liquid mixture from the blender over the dry ingredients in the bowl. 
    Mix gently until all ingredients are incorporated.
  • Pour the batter into the prepared tin and bake in the preheated oven for about 40-45 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes. 
    Then transfer it to a cooling rack and let it cool completely.
  • The creamy corn cake can be served warm or cold. 
    You can sprinkle icing sugar on top or even add a topping of your choice.
  • Cut into slices and serve.
