Directions
- Peel the carrots and grate them finely using a food processor or mandoline.

- Line a baking sheet with a silicone mat or aluminum foil, then place a sheet of parchment paper on top.
- Spread the grated carrots evenly over the parchment paper.

- Bake in a preheated oven at 50°C (122°F) for 3½ hours, or until completely dry. If your oven does not have such a low temperature setting, dehydrate the carrots with the oven door slightly ajar.
- Use the dehydrated carrots in a variety of recipes of your choice and keep them stored in a sealed container in the refrigerator.
