To make your tripe with white beans, you will need to use the ingredients listed below and follow the step-by-step instructions.

Ingredients

  • 500g of white beans

  • 1kg beef tripe (doubled)

  • 50ml of vinegar

  • 6 bay leaves

  • 4 tablespoons of oil

  • 250g bacon cut into cubes

  • 1 slice of pepperoni (270g)

  • 1 chopped onion

  • 6 crushed garlic cloves

  • Half sachet of tomato sauce

  • 1 teaspoon of paprika

  • Half chili pepper, minced without seeds

  • Salt to taste (I used 2 dessert spoons)

  • chopped chives

Directions

  • In a pressure cooker, add 500g of white beans;
  • Add 3 bay leaves;
  • Add water (3 fingers above the beans);
  • Cover the pan and turn on the fire;
  • Leave on pressure for 35 minutes;
  • In a pan, add 1 kg of clean beef tripe (doubled), without fat;
  • Cover with water;
  • Add 50ml of vinegar;
  • Turn on the fire and let it boil for 10 minutes;
  • Turn off the heat and discard the water;
  • Top up again with water;
  • Boil for another 10 minutes;
  • Discard the water again;
  • Transfer to a pressure cooker;
  • Cover with water;
  • Add 3 bay leaves;
  • Add 1 dessert spoon of salt;
  • Cover the pan, as soon as it gets pressure, let it cook for 30 minutes;
  • In a pan on the fire, add 4 tablespoons of oil;
  • Fry 250g of bacon;
  • Add 1 slice of pepperoni (270g);
  • Let it fry;
  • Make a space in the middle of the pan and add 1 onion cut into cubes;
  • Add 6 cloves of crushed garlic;
  • Let it fry well;
  • Add half a sachet of tomato sauce;
  • Add 1 teaspoon of paprika;
  • Add half a girl’s finger pepper (chopped and seeded);
  • Add the cooked beans;
  • Add the cooked tripe;
  • Add salt to taste;
  • Mix well and add more water if needed;
  • Cover the pan and let it boil for 20 minutes;
