Ingredients
3 ripe bananas
2 cups of wheat flour
1 cup of sugar
1/2 cup vegetable oil
3 eggs
1 teaspoon of vanilla essence
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon of cinnamon powder (optional)
1/2 cup natural yogurt
Directions
- Preheat the oven to 180°C.Â
Grease a cake pan with margarine and sprinkle with flour. - In a bowl, mash the bananas with a fork until puree.
- In another large bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using).
- In a third bowl, beat the eggs with the sugar until you obtain a creamy mixture.Â
Add the oil, vanilla essence and banana puree, mixing well. - Gradually add the dry ingredients to the banana mixture, stirring gently to combine.
- Add the yogurt to the dough and stir until you obtain a homogeneous dough.
- Lastly, add the baking powder to the dough and mix gently.
- Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- Serve the fluffy banana cake cut into slices and enjoy!
