Ingredients
3 eggs
250 ml of milk
3 cups of flour (wheat)
2 bottles of coconut milk
1 and 1/2 cup (tea) of sugar
1 box of condensed milk
1 tablespoon of baking powder
1/2 cup (tea) of oil
Grated coconut to decorate
Directions
- Place the eggs and sugar in a mixer and beat for a few minutes.
Add the oil, milk and beat some more.
Gradually add the sifted wheat flour while beating and then put the yeast.
Mix with a spoon until the dough is smooth and uniform. - Grease a baking sheet with butter or margarine and flour, pour the cake batter into it and bake in a preheated oven at 180º₢ for approximately 30 to 40 minutes.
- Remove the cake from the oven and let it cool to room temperature.
In a separate container, mix the condensed milk with the coconut milk, make cuts all over the cake and pour the frosting on top.
Then cover the cake with plastic film in contact and leave it in the fridge until it freezes completely. - Remove the cake from the fridge when it is very cold and sprinkle grated coconut to taste on top.
Serve in dishes of your choice and the iced coconut cake is ready.
