This ham pâté has an incredible, distinctive flavor and an irresistibly creamy texture.

Ingredients

  • 1 piece of ham (250 g / 8.8 oz)

  • 50 ml brandy

  • 100 ml mayonnaise

  • 100 ml heavy cream

  • 2 tablespoons olive oil

  • 1/2 red onion, sliced

  • 6 cloves garlic

Directions

  • Brush 1 tablespoon of olive oil over the piece of ham. Place the ham in a skillet or frying pan with the oiled side facing down.
  • Brush the remaining tablespoon of olive oil over the top of the ham. Cook over medium heat until the bottom is lightly browned.
  • Flip the ham and cook the other side over medium heat until it is also lightly browned. Transfer the ham to a cutting board and set aside.
  • In the same pan used to cook the ham, add the brandy and scrape up the browned bits from the bottom of the pan with a spatula.
  • As soon as the brandy comes to a boil, return the ham to the pan and cook until all the liquid has been absorbed by the ham.
  • Cut the ham into medium-sized pieces and place them in a food processor. Add the sliced red onion and the garlic cloves after soaking them in boiling water.
  • Add the heavy cream and mayonnaise, then process until the pâté reaches your desired consistency.
  • Serve the ham pâté however you like, and store any leftovers in an airtight container in the refrigerator.
