Make your homemade tomato sauce using the ingredients below and following the step-by-step preparation method.

Ingredients

  • 8-10 ripe tomatoes

  • 2 tablespoons of olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 bay leaf

  • Salt and pepper to taste

  • 1 tsp sugar (optional, to balance the acidity of the tomatoes)

  • Fresh or dried herbs to taste, such as basil, oregano, and parsley (optional)

Directions

  • Wash the tomatoes and make a small cut in the shape of an “X” on the underside of each one. 
    This will make it easier to remove the skin after cooking.
  • In a large pan, heat the olive oil over medium heat. 
    Add the chopped onion and chopped garlic and sauté until soft and lightly browned.
  • While the onion and garlic are cooking, place the tomatoes in a large pot of boiling water for about 1-2 minutes. 
    This will help loosen the skin.
  • Remove the tomatoes from the boiling water and immediately place them in a bowl of ice water to stop the cooking process. 
    Then remove the skin from the tomatoes.
  • Chop the tomatoes into small pieces.
  • When the onion and garlic are ready, add chopped tomatoes to the pan. 
    Mix well and add the bay leaf. 
    Let the mixture cook over medium heat for about 20-30 minutes, stirring occasionally, until the tomatoes are broken down and the sauce has reduced and thickened.
  • Season sauce with salt, pepper, and sugar (if using) to taste. 
    If you are using herbs, add them now.
  • Continue cooking the sauce for a few more minutes to allow the flavors to blend.
  • Remove the bay leaf from the sauce and discard.
  • If you prefer a smoother sauce, you can use a hand mixer or blender to puree it.
