Homemade Tomato Sauce

Ingredients
8-10 ripe tomatoes
2 tablespoons of olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 bay leaf
Salt and pepper to taste
1 tsp sugar (optional, to balance the acidity of the tomatoes)
Fresh or dried herbs to taste, such as basil, oregano, and parsley (optional)
Directions
- Wash the tomatoes and make a small cut in the shape of an “X” on the underside of each one.
This will make it easier to remove the skin after cooking. - In a large pan, heat the olive oil over medium heat.
Add the chopped onion and chopped garlic and sauté until soft and lightly browned. - While the onion and garlic are cooking, place the tomatoes in a large pot of boiling water for about 1-2 minutes.
This will help loosen the skin. - Remove the tomatoes from the boiling water and immediately place them in a bowl of ice water to stop the cooking process.
Then remove the skin from the tomatoes. - Chop the tomatoes into small pieces.
- When the onion and garlic are ready, add chopped tomatoes to the pan.
Mix well and add the bay leaf.
Let the mixture cook over medium heat for about 20-30 minutes, stirring occasionally, until the tomatoes are broken down and the sauce has reduced and thickened. - Season sauce with salt, pepper, and sugar (if using) to taste.
If you are using herbs, add them now. - Continue cooking the sauce for a few more minutes to allow the flavors to blend.
- Remove the bay leaf from the sauce and discard.
- If you prefer a smoother sauce, you can use a hand mixer or blender to puree it.
