Ingredients
2 cups dried lentils
1 large onion, chopped
2 large carrots, sliced
2 celery stalks, chopped
2 cloves garlic, minced
1 can (400g) chopped tomatoes
6 cups vegetable broth or water
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Juice of 1 lemon (optional)
Fresh cilantro or chopped parsley for garnish (optional)
Directions
- In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender.
- Add the lentils to the pan and stir to combine with the vegetables.
- Pour the vegetable stock or water into the pan. Add the chopped tomatoes, ground cumin, and smoked paprika. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to medium-low and simmer for about 30-40 minutes, or until the lentils are tender.
