Ingredients

  • 2 cups dried lentils

  • 1 large onion, chopped

  • 2 large carrots, sliced

  • 2 celery stalks, chopped

  • 2 cloves garlic, minced

  • 1 can (400g) chopped tomatoes

  • 6 cups vegetable broth or water

  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • Juice of 1 lemon (optional)

  • Fresh cilantro or chopped parsley for garnish (optional)

Directions

  • In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender.
  • Add the lentils to the pan and stir to combine with the vegetables.
  • Pour the vegetable stock or water into the pan. Add the chopped tomatoes, ground cumin, and smoked paprika. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat to medium-low and simmer for about 30-40 minutes, or until the lentils are tender.
  • If desired, add lemon juice to the soup before serving for a touch of freshness.
  • Serve the soup hot, garnished with fresh cilantro or parsley, if desired.
