Ingredients

  • 4 large onions, cut into thin slices

  • 2 tablespoons of wheat flour

  • 2 tablespoons of butter

  • 4 cups chicken broth or vegetable broth

  • 1 cup of cream

  • Salt and pepper to taste

  • Grated cheese (optional, for serving)

  • Chopped chives (optional, for serving)

Directions

  • In a large pan, melt the butter over medium heat.
  • Add the onion slices and cook, stirring occasionally, until they are soft and caramelized, about 20-25 minutes.
  • Reduce heat if necessary to prevent onions from burning.
  • Sprinkle the flour over the caramelized onions and stir well to combine.
  • Cook for another 2-3 minutes, stirring constantly, so that the flour loses its raw flavor.
  • Gradually add the chicken broth or vegetable broth to the pan, stirring constantly to prevent lumps from forming.
  • Bring the soup to a boil, then reduce the heat and simmer for about 10-15 minutes, stirring occasionally, until the soup thickens slightly.
  • Turn off the heat and add the cream to the soup, stirring well to combine.
  • Season the onion cream with salt and pepper to taste.
  • Serve the onion cream hot, sprinkled with grated cheese and chopped chives, if desired.
