Ingredients
4 large onions, cut into thin slices
2 tablespoons of wheat flour
2 tablespoons of butter
4 cups chicken broth or vegetable broth
1 cup of cream
Salt and pepper to taste
Grated cheese (optional, for serving)
Chopped chives (optional, for serving)
Directions
- In a large pan, melt the butter over medium heat.
- Add the onion slices and cook, stirring occasionally, until they are soft and caramelized, about 20-25 minutes.
- Reduce heat if necessary to prevent onions from burning.
- Sprinkle the flour over the caramelized onions and stir well to combine.
- Cook for another 2-3 minutes, stirring constantly, so that the flour loses its raw flavor.
- Gradually add the chicken broth or vegetable broth to the pan, stirring constantly to prevent lumps from forming.
- Bring the soup to a boil, then reduce the heat and simmer for about 10-15 minutes, stirring occasionally, until the soup thickens slightly.
- Turn off the heat and add the cream to the soup, stirring well to combine.
- Season the onion cream with salt and pepper to taste.
- Serve the onion cream hot, sprinkled with grated cheese and chopped chives, if desired.
