Ingredients
8 chicken pieces (drumsticks or thighs, skin on)
1 cup buttermilk
1 cup all-purpose flour
1 cup breadcrumbs (panko preferred)
2 tbsp olive oil or melted butter
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried oregano
½ tsp chili powder (optional)
Directions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Place the chicken pieces in a bowl and pour the buttermilk over them. Let them soak for at least 10 minutes (or up to overnight in the refrigerator for more flavor).
- In another bowl, mix the flour, breadcrumbs, salt, pepper, paprika, garlic powder, onion powder, oregano, and chili powder.
- Remove each piece of chicken from the buttermilk, allowing excess to drip off, then dredge thoroughly in the flour mixture until fully coated.
- Place the coated chicken pieces on the prepared baking sheet. Drizzle or brush lightly with olive oil or melted butter to help the crust crisp up.
- Bake for 35–40 minutes, turning once halfway through, until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).
