This oven fried chicken recipe is the perfect balance of flavor and texture. Marinated chicken pieces are coated in a well-seasoned crust and baked to crispy perfection, creating a healthier alternative to traditional fried chicken while still keeping that delicious, crunchy bite.

Ingredients

  • 8 chicken pieces (drumsticks or thighs, skin on)

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 cup breadcrumbs (panko preferred)

  • 2 tbsp olive oil or melted butter

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp chili powder (optional)

Directions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Place the chicken pieces in a bowl and pour the buttermilk over them. Let them soak for at least 10 minutes (or up to overnight in the refrigerator for more flavor).
  • In another bowl, mix the flour, breadcrumbs, salt, pepper, paprika, garlic powder, onion powder, oregano, and chili powder.
  • Remove each piece of chicken from the buttermilk, allowing excess to drip off, then dredge thoroughly in the flour mixture until fully coated.
  • Place the coated chicken pieces on the prepared baking sheet. Drizzle or brush lightly with olive oil or melted butter to help the crust crisp up.
  • Bake for 35–40 minutes, turning once halfway through, until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).
  • Let the chicken rest for 5 minutes before serving. Enjoy with your favorite sides.
