Ingredients

  • 150 grams of chopped bacon or 1 cup

  • 1/2 tablespoon of olive oil or 8 grams (if the bacon does not release almost any fat)

  • 1 teaspoon of garlic or 4 grams

  • 1 small egg or 46 grams

  • 3 egg yolks or 50 grams

  • 1/4 teaspoon of black pepper or 0.4 grams

  • 1/4 cup (tea) grated Parmesan cheese or 30 grams

  • 3 tablespoons of boxed cream or 48 grams

  • 1/4 teaspoon freshly grated nutmeg or 0.2 grams

  • 6 tablespoons of cream cheese or 80 grams

  • 1/8 teaspoon of salt or 0.5 gram

  • 2 liters of water

  • 200 grams of macaroni

  • 1/2 cup (tea) of pasta cooking water or 110 grams or 110 ml (water to put in the pan along with the egg mixture)

Directions

  • In a pan over low heat, add chopped bacon;
  • fry;
  • Remove half of the bacon from the pan;
  • Add 1 tsp of oil to the pan;
  • Add 1 teaspoon of garlic;
  • Fry a little;
  • In a bowl, add 1 egg;
  • Add 3 yolks;
  • Add 1/4 teaspoon of black pepper or 0.4 grams;
  • Add 1/4 cup (tea) of grated Parmesan cheese or 30 grams;
  • Add 3 tablespoons of boxed milk cream or 48 grams;
  • Add 1/4 teaspoon of freshly grated nutmeg or 0.2 grams;
  • Add 6 tablespoons of cream cheese or 80 grams;
  • Add 1 pinch of salt;
  • Mix;
  • Boil the pasta for 7 minutes (until al dente, not too soft);
  • Add the noodles to the bacon pan (with the heat off);
  • Mix;
  • Add the sauce;
  • Add 1 cup of pasta cooking water;
  • Mix;
  • Add the bacon;
