Pasta Garlic and Oil

Ingredients
250g pasta (spaghetti, linguine or fettuccine)
4 minced garlic cloves
1/4 cup olive oil
1 tablespoon red pepper flakes (optional)
salt to taste
chopped parsley to finish
Directions
- In a large pot, boil salted water.
Add pasta and cook until al dente, according to package directions. - While the pasta is cooking, heat the oil in a skillet over medium heat.
Add the minced garlic and red pepper flakes (if using) and saute for about 2 minutes, or until the garlic is golden and fragrant.
Be careful not to burn the garlic. - When the pasta is ready, drain it well and reserve some of the cooking water.
- Add the drained pasta to the skillet with the garlic and oil.
Mix well so that the noodles are coated with the garlic and oil.
If necessary, add a little of the cooking water to help loosen the noodles. - Season with salt to taste and mix again.
Make sure the pasta is well seasoned. - Transfer the noodles to serving plates and sprinkle chopped parsley on top.
