Discover the convenience, flavor, and texture of this pumpkin and coconut dessert.

Ingredients

  • 1 kg (2.2 lb) pumpkin, peeled, seeded, and grated or blended

  • 3/4 cup sugar or xylitol (or another sweetener of your choice)

  • 3/4 cup shredded coconut

  • 1 cup water

  • 3 whole cloves

Directions

  • Place the grated or blended pumpkin, cloves, sugar, and water in a saucepan. Cook over medium-low heat, stirring to combine, and cover the saucepan.
  • Keep the saucepan covered over medium-low heat, stirring occasionally, for approximately 20 minutes.
  • Add the shredded coconut and continue cooking for another 5 minutes, stirring well. Transfer the dessert to a serving dish or container.
  • Refrigerate the pumpkin sweet for a few hours. Serve chilled, topped with additional shredded coconut to taste.
