Red Velvet Cake

Here is a basic recipe for making a delicious Red Velvet Cake:

Ingredients

  • 2 1/2 cups sifted wheat flour

  • 1 1/2 cups of sugar

  • 1 teaspoon of bicarbonate of soda

  • 1 teaspoon powdered yeast

  • 1 teaspoon cocoa powder

  • 1 teaspoon of salt

  • 1 1/2 cups vegetable oil

  • 1 cup buttermilk (or 1 cup milk with 1 tablespoon white vinegar or lemon juice)

  • 2 big eggs

  • 2 teaspoons of vanilla extract

  • 2 teaspoons white vinegar

  • 2 tbsp liquid red food coloring

  • 225g cream cheese at room temperature

  • 1/2 cup butter at room temperature

  • 3-4 cups of icing sugar

  • 1 teaspoon vanilla extract

Directions

  • Preheat the oven to 180°C. 
    Grease and flour two round molds of approximately 22 cm in diameter.
  • In a large bowl, combine the flour, sugar, baking soda, baking powder, cocoa powder and salt.
  • In another bowl, combine the vegetable oil, buttermilk, eggs, vanilla extract, white vinegar and red food coloring.
  • Add the liquid ingredients to the dry mixture and stir well until all ingredients are well incorporated.
  • Divide the batter evenly between the two prepared pans.
  • Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the frosting by beating the cream cheese and butter together until smooth and creamy. 
    Gradually add the icing sugar and vanilla, beating well until smooth and fluffy.
  • Remove the cakes from the oven and let them cool in the tins for a few minutes. 
    Then unmold and cool completely on a wire rack before assembling the cake.
  • When the cakes are completely cool, place one on a serving plate and spread a generous layer of frosting over it. 
    Place the second cake on top and cover the entire cake with the rest of the frosting, decorating as desired.
