Ingredients
500g large prawns, peeled and cleaned
2 tablespoons of butter
1 medium onion, chopped
2 garlic cloves, chopped
1 red pepper, chopped
200g mushrooms, sliced (optional)
1 tablespoon tomato paste
1 tablespoon of ketchup
1 tablespoon mustard
1/2 cup tomato sauce
1/2 cup of cream
1/2 cup of milk
Salt and pepper to taste
Chopped parsley to decorate
Cooked white rice or pasta to serve
Directions
- In a large skillet, melt the butter over medium-high heat.
Add the prawns and cook for about 2-3 minutes on each side, or until they are pink and cooked through.
Remove the shrimp from the pan and set aside. - In the same frying pan, add a little more butter, if necessary, and sauté the onion, garlic and pepper until soft, about 5 minutes.
- If using mushrooms, add them to the skillet and cook for another 2-3 minutes until they are tender.
- Add the tomato paste, ketchup and mustard to the pan, stirring well to incorporate all the ingredients.
- Pour the tomato sauce into the skillet and stir to combine.
Let the mixture cook for another 2-3 minutes. - Reduce the heat to medium-low and add the cream and milk to the mixture.
Cook for a few more minutes, stirring occasionally, until the sauce is heated through and slightly thickened. - Season the sauce with salt and pepper to taste.
- Return the cooked shrimp to the skillet and cook for another 1-2 minutes to heat them through.
- Serve the shrimp stroganoff over white rice or cooked pasta and sprinkle with chopped parsley to decorate.
