Traditional Braised Zucchini

Ingredients
2 zucchinis (about 1 kg)
2 garlic cloves
2 tablespoons of oil
1 teaspoon salt
1 tablespoon shoyu
1 teaspoon oregano
1 chopped onion
1/2 teaspoon paprika
1/2 teaspoon(s) black pepper
Chopped green parsley to taste (optional)
Directions
- Wash the zucchinis well, remove the seeds from them and cut them into small pieces.Â
In a pan over low heat add the oil, the chopped garlic and stir constantly until golden.Â
Add the chopped onion, the chopped zucchinis and mix well. - Add the oregano, black pepper, paprika, salt, soy sauce and sauté for a few minutes, stirring constantly.Â
Then add the chopped green smell, put the lid on and let it cook for approximately 7 minutes on low heat.Â
Remove the lid, let the steam escape for 2 minutes and the braised zucchini is ready to serve.
