Ingredients

  • 2 zucchinis (about 1 kg)

  • 2 garlic cloves

  • 2 tablespoons of oil

  • 1 teaspoon salt

  • 1 tablespoon shoyu

  • 1 teaspoon oregano

  • 1 chopped onion

  • 1/2 teaspoon paprika

  • 1/2 teaspoon(s) black pepper

  • Chopped green parsley to taste (optional)

Directions

  • Wash the zucchinis well, remove the seeds from them and cut them into small pieces. 
    In a pan over low heat add the oil, the chopped garlic and stir constantly until golden. 
    Add the chopped onion, the chopped zucchinis and mix well.
  • Add the oregano, black pepper, paprika, salt, soy sauce and sauté for a few minutes, stirring constantly. 
    Then add the chopped green smell, put the lid on and let it cook for approximately 7 minutes on low heat. 
    Remove the lid, let the steam escape for 2 minutes and the braised zucchini is ready to serve.
