Ingredients
1 onion
1 bell pepper
1 Zucchini
2 Eggplants
2 Tomatoes
Garlic to taste
Basil to taste
Olive oil to taste
Salt to taste
Directions
- Cut the eggplants and zucchini into slices and chop into cubes.Â
Cut the bell pepper in half, remove the seeds and cut it into strips.Â
Cut each tomato into 8 parts, the onion into strips and the garlic into chips. - Arrange all the vegetables in a baking dish, season with salt to taste and drizzle with plenty of olive oil.Â
Mix well and season with basil to taste on top. - Bake the vegetables in a preheated oven at 250º₢ for approximately 50 minutes.
- Carefully remove the vegetables from the oven, wait for them to cool down a bit and the recipe is ready to be served.
