In addition to being tasty and healthy, vegetables in the oven are super easy to make!


  • 1 onion

  • 1 bell pepper

  • 1 Zucchini

  • 2 Eggplants

  • 2 Tomatoes

  • Garlic to taste

  • Basil to taste

  • Olive oil to taste

  • Salt to taste


  • Cut the eggplants and zucchini into slices and chop into cubes. 
    Cut the bell pepper in half, remove the seeds and cut it into strips. 
    Cut each tomato into 8 parts, the onion into strips and the garlic into chips.
  • Arrange all the vegetables in a baking dish, season with salt to taste and drizzle with plenty of olive oil. 
    Mix well and season with basil to taste on top.
  • Bake the vegetables in a preheated oven at 250º₢ for approximately 50 minutes.
  • Carefully remove the vegetables from the oven, wait for them to cool down a bit and the recipe is ready to be served.
