Ingredients

  • 2 cups arborio rice

  • 5 tablespoons of olive oil

  • Half an onion, grated or finely chopped

  • 3 minced garlic cloves

  • 50 ml dry white wine

  • 1 liter hot beef or vegetable broth

  • 100 grams of shredded cheese

  • 100 grams of shredded mozzarella cheese

  • 100 grams of grated Parmesan cheese

  • 50 grams of shredded gorgonzola cheese

  • Salt (to taste)

  • Black pepper (to taste)

  • 3 tablespoons of butter

Directions

  • In a pan, add 1 tsp of oil;
  • Add some butter;
  • Add half a grated or finely chopped onion;
  • Add a pinch of salt and mix;
  • Add 2 cups (tea) of arborio rice;
  • Mix well;
  • Add 3 minced garlic cloves;
  • Mix;
  • Add 50 ml of dry white wine;
  • Mix and let evaporate;
  • Add 1 liter of hot beef or vegetable broth;
  • Mix until the broth evaporates;
  • Add 1 pinch of black pepper;
  • Add 2 tablespoons of cold butter;
  • Add the 4 cheeses;
  • Mix until melted and turn off the heat;
