2 cups of wheat flour
1 cup of sugar
2 eggs
1 tablespoon baking powder
1/2 cup milk
1 teaspoon ground cinnamon
Frying oil
Powdered sugar (optional, for sprinkling)
Directions
- In a large bowl, mix together the flour, sugar, eggs, baking powder, milk and ground cinnamon until you have a smooth batter. If the batter is too runny, add a little more flour. If it is too thick, add a little more milk.
- Heat oil in a deep saucepan over medium heat.
- When the oil is hot enough (about 170°C), use a teaspoon to scoop up portions of the batter and place them in the hot oil. Don’t add too many at once to prevent the oil from cooling down.
- Fry the dumplings until golden brown on the outside, turning them over to ensure they cook evenly.
- Remove the dumplings with a slotted spoon and place them on absorbent paper to remove excess oil.
- If desired, dust the cupcakes with confectioners’ sugar before serving.
- Serve the rain cakes while still warm and enjoy!
