Ingredients

  • 2 cups of wheat flour

  • 1 cup of sugar

  • 2 eggs

  • 1 tablespoon baking powder

  • 1/2 cup milk

  • 1 teaspoon ground cinnamon

  • Frying oil

  • Powdered sugar (optional, for sprinkling)

Directions

  • In a large bowl, mix together the flour, sugar, eggs, baking powder, milk and ground cinnamon until you have a smooth batter. If the batter is too runny, add a little more flour. If it is too thick, add a little more milk.
  • Heat oil in a deep saucepan over medium heat.
  • When the oil is hot enough (about 170°C), use a teaspoon to scoop up portions of the batter and place them in the hot oil. Don’t add too many at once to prevent the oil from cooling down.
  • Fry the dumplings until golden brown on the outside, turning them over to ensure they cook evenly.
  • Remove the dumplings with a slotted spoon and place them on absorbent paper to remove excess oil.
  • If desired, dust the cupcakes with confectioners’ sugar before serving.
  • Serve the rain cakes while still warm and enjoy!
