Ingredients

  • 4 cups fresh spinach leaves, washed and dried

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup toasted walnuts or almonds

  • 1/2 cup sliced cucumber

  • 1 hard-boiled egg, sliced (optional)

  • 2 tablespoons olive oil

  • 1 tablespoon Dijon mustard

  • 1 tablespoon honey

  • 1 tablespoon apple cider vinegar (or lemon juice)

  • Salt and pepper to taste

Directions

  • Arrange the spinach leaves on a large plate or in a salad bowl.
  • Add the cherry tomatoes, red onion, feta cheese, walnuts, cucumber slices, and hard-boiled egg (if using).
  • In a small bowl or jar, whisk together olive oil, Dijon mustard, honey, and apple cider vinegar.
  • Season with salt and pepper to taste.
