Ingredients

  • 2 ½ cups (310g) all-purpose flour

  • 2 ½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup (226g) unsalted butter, softened

  • 1 ¾ cups (350g) granulated sugar

  • 4 large eggs

  • 1 tablespoon pure vanilla extract

  • 1 cup (240ml) buttermilk

  • ¾ cup (120g) rainbow sprinkles (avoid nonpareils, as they can bleed)

  • 1 cup (226g) unsalted butter, softened

  • 4 cups (480g) powdered sugar

  • 2 teaspoons pure vanilla extract

  • 3 tablespoons heavy cream (adjust for consistency)

  • Pinch of salt

  • Extra sprinkles for decorating

Directions

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans or line them with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, beat the butter and sugar until light and fluffy (about 3 minutes).
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
  • Start and end with the dry ingredients, mixing until just combined.
  • Gently fold in the sprinkles (be careful not to overmix).
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a large bowl, beat the butter until creamy.
  • Gradually add the powdered sugar, vanilla, heavy cream, and salt.
  • Beat until smooth and fluffy (about 2–3 minutes).
  • Spread a layer of frosting over the first cake layer.
  • Place the second layer on top and frost the top and sides.
  • Decorate with extra sprinkles.
  • Chill for 20–30 minutes before slicing for cleaner cuts.
  • Slice, serve, and enjoy!
