1 cup (240ml) buttermilk
¾ cup (120g) rainbow sprinkles (avoid nonpareils, as they can bleed)

Directions
- Preheat the oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the butter and sugar until light and fluffy (about 3 minutes).
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
- Start and end with the dry ingredients, mixing until just combined.
- Gently fold in the sprinkles (be careful not to overmix).
- Divide the batter evenly between the prepared cake pans.
- Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- In a large bowl, beat the butter until creamy.
- Gradually add the powdered sugar, vanilla, heavy cream, and salt.
- Beat until smooth and fluffy (about 2–3 minutes).
- Spread a layer of frosting over the first cake layer.
- Place the second layer on top and frost the top and sides.
- Decorate with extra sprinkles.
- Chill for 20–30 minutes before slicing for cleaner cuts.
