Ingredients
4 cups fresh or frozen blueberries
1/2 cup granulated sugar
1 tbsp cornstarch
1/2 tsp lemon zest
1 tsp lemon juice
1/2 tsp vanilla extract
Pinch of salt
1 cup all-purpose flour
1/2 cup granulated sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter (melted)
1/2 cup milk
1/2 tsp vanilla extract
Optional: coarse sugar for sprinkling
Directions
- Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish or similar size.
- In a medium bowl, mix blueberries with sugar, cornstarch, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Toss to coat, then pour into the prepared baking dish.
- In another bowl, whisk flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla. Stir until just combined (don’t overmix).
- Drop spoonfuls of the batter evenly over the berries. It doesn’t need to cover everything — it will spread while baking. Optionally, sprinkle coarse sugar on top for a crunchy finish.
- Bake for 35–40 minutes, or until the top is golden brown and the blueberries are bubbling.
- Let it cool for at least 10–15 minutes. Serve warm with ice cream or whipped cream.
