Ingredients
1¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
2 cups granulated sugar
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup hot coffee (or hot water)
1 cup unsalted butter, softened
3½ cups powdered sugar
½ cup cocoa powder
½ cup melted dark chocolate
½ cup heavy cream
1 tsp vanilla extract
Directions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a large bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Slowly stir in hot coffee—batter will be thin (this is key for moisture!).
- Divide batter evenly between pans and bake for 30–35 minutes, or until a toothpick comes out clean.
- Let cakes cool completely before frosting.
- Beat butter until creamy. Add powdered sugar and cocoa powder gradually.
- Mix in melted chocolate, cream, and vanilla until thick, smooth, and glossy.
- Frost cake layers generously. Slice. Devour.
