Ingredients
300 g dried apricots
250 ml boiling filtered water
1 cup (240 ml) filtered water
50 ml vinegar
150 g sugar
Directions
- Chop the dried apricots and place them in a bowl. Pour the boiling water over them and let them soak overnight.
- ransfer the soaked apricots to a saucepan. Add the sugar, vinegar, and filtered water. Cook over low heat, stirring frequently, for about 40 minutes.

- For a smooth jam, blend the mixture using a food processor or immersion blender. If you prefer a rustic texture, leave larger pieces of apricot intact.
- Continue cooking over low heat, stirring frequently, until the jam thickens and no longer drips easily from a spoon. Transfer the jam to a clean jar with a lid. Serve as desired and store it in the refrigerator after opening.
