Filet Mignon with Madeira Sauce (Medallion)

Ingredients
Medallion 2 units
bacon 2 slices
Olive oil 1 tablespoon (13 mL)
Butter 1/2 tablespoon (10g)
Tomato extract ½ tablespoon (7g)
Hot water 1/2 cup (120 mL)
1/4 cup (60 mL) dry red wine
salt to taste
pepper to taste
Wheat flour 2 teaspoons (10g)
Fresh sliced mushroom (60g)
Directions
- Medallions
- Wrap the bacon around the medallions (attach with toothpicks);
- In a skillet on the heat, add 1 tbsp (13 mL) Olive Oil;
- Season the medallions with salt on both sides and pepper to taste;
- When the skillet is hot, add the medallions;
- After 2 minutes, turn the medallions over;
- Brown the sides;

- In the same skillet (without washing), add 1/2 tablespoon (10g) Butter and let it melt;
- Add Wheat Flour 2 tsp (10g);
- Mix;
- Add 1/4 cup (60 mL) dry red wine;
- Add Tomato Extract ½ tbsp (7g);
- Add 1/2 cup (120 mL) hot water;
- Mix and let it boil;
- Add sliced fresh paris mushroom (60g);
- Mix and let it thicken a little;
- Add the Madeira sauce to the medallion;
- Your filet mignon medallion with Madeira sauce is ready!
