Ingredients
- Dough
1 yolk
2 cups wheat flour (tea)
40 ml of ice water
100 grams of butter or margarine
- Stuffing
4 eggs
2 leek stalks
2 tablespoons cottage cheese
1 box of cream
1 small onion
1 pinch of salt
1 thread of olive oil
100 grams of grated parmesan
Chili pepper to taste
Directions
- Start the recipe by preparing the dough.
To do this, place the wheat flour and egg yolk in a large bowl and mix well.
Add the butter or margarine, the cold water and mix again.
Knead the dough with your hands until it is smooth, soft and homogeneous.
Distribute the dough throughout the quiche shape and make some holes with a fork. - Place the dough in a preheated oven at 180º₢ and bake for 20 minutes to pre-bake it.
Meanwhile, prepare the stuffing by placing a drizzle of olive oil in a pan, the chopped onion, the sliced leek, a pinch of salt, chopped red pepper to taste and sautéing well without stopping stirring, until the leek and the onion wilt and brown. - In a bowl add the eggs and beat with a whisk.
Add the milk cream, the cottage cheese and mix again with the fuê.
Put the braised vegetables, grated parmesan cheese and mix again.
Pour the filling over the dough, bake in a preheated oven at 200º₢ for between 30 and 40 minutes and the leek quiche is ready to serve.
