Ingredients
1 cup corn for hominy
1 liter of whole milk
1 cup coconut milk
1 cup of sugar
4 cloves from India
1 cinnamon stick
1 pinch of salt
Cinnamon powder for sprinkling
Directions
- Wash the hominy and soak it in cold water for at least 6 hours.
- Place the hominy in a pressure cooker, cover with water and cook for about 40 minutes or until the hominy is soft.
- In another pan, add the milk, sugar, coconut milk, cinnamon sticks, cloves and a pinch of salt.
- Bring the mixture to a boil over medium heat, stirring constantly, until it begins to boil.
- When the hominy is cooked, drain the water and add it to the milk mixture.
- Cook for a few more minutes, stirring constantly, until the hominy is very creamy and cooked through.
- Remove the cinnamon stick and cloves and serve hot or cold, sprinkled with powdered cinnamon.
