Ingredients
2 cups of cassava flour
4 tablespoons of butter
1 small chopped onion
2 minced garlic cloves
Salt to taste
Black pepper to taste
1/2 cup diced bacon (optional)
1/2 cup chopped green olives (optional)
Chopped parsley or cilantro to finish (optional)
Directions
- In a large skillet, melt the butter over medium heat.
- Add the diced bacon and fry until golden and crispy.Â
If not using bacon, skip this step. - Add the chopped onion and garlic to the skillet and sauté until soft and lightly browned.
- Add the cassava flour to the skillet and stir well to incorporate all the ingredients.
- Cook the cassava flour over medium-low heat, stirring regularly to prevent it from sticking to the bottom of the skillet.Â
Cook for about 5 to 7 minutes, or until the farofa is golden and crispy. - Season with salt and pepper to taste.Â
If you prefer, you can add other spices of your choice, such as paprika, cumin or dried herbs. - Add the chopped green olives to the skillet and mix well.Â
This is optional, but adds extra flavor to the farofa. - Remove the skillet from the heat and finish the farofa with chopped parsley or cilantro to add a touch of freshness.
- Transfer the farofa to a container and let it cool a little before serving.Â
It can be served as an accompaniment to various dishes, such as meat, poultry, fish and beans.
